Here is a working definition: an indigenous food is a product cultivated or harvested by a specific community, in a specific geography, using traditional methods developed over generations, where the product's qualities are inseparable from its origin and cultivation practice.

Three things distinguish indigenous foods from simply "traditional" or "regional" foods:

  1. Community knowledge ownership. The farming method, seed selection, and processing technique belong to a specific community — often tribal or forest-dwelling — and have been transmitted through practice, not documentation.
  2. Ecological inseparability. Assam Orthodox Tea — Assam

Southern India

Araku Valley Coffee — Visakhapatnam, Andhra Pradesh
The success story of Indian tribal coffee. Araku arabica is grown at 900–1,100m by tribal communities (primarily Bagata, Kondadora, and Valmiki tribes) in the Araku Valley. Produced by native bees (primarily Apis cerana indica) in the biodiverse forests of Coorg. Small-scale production, no major organised supply chain.

Western and Central India

Kutch Dates — Kutch, Gujarat
Grown in the arid landscape of Kutch by communities that have farmed date palms for centuries. Indigenous date varieties have different sugar compositions and flavour profiles from commercially imported dates. Small production volumes, minimal mainstream market access.

Chhattisgarh and Jharkhand Millets
Ragi (finger millet), kodo millet, kutki (little millet), and sawa (barnyard millet) — collectively called "tribal millets" — have been staple crops of tribal communities across central India for thousands of years. They are drought-resistant, highly nutritious (higher protein, iron, and calcium than rice or wheat), and require no chemical inputs. The push to shift tribal farming to commercial rice and wheat has eroded these varieties significantly. Recent interest in "ancient grains" has created commercial opportunity, but few brands source directly from tribal farmers.

Why These Foods Remain Invisible

The pattern is consistent across all of these products: the food exists, it is exceptional, the farming community that grows it is economically marginalised, and the commercial supply chain extracts value without returning it to the source.
